This soup recipe is very simple, easy to make and delicious. This actually tastes even better the 2nd day!
Tomato, Garbanzo & Spinach Soup Recipe1 medium onion, chopped
2 cloves garlic, minced
1 tbsp vegetable oil
2 cups vegetable stock
2 cans (19oz) diced tomatoes
1 cans garbanzo beans (chick peas), drained and rinsed
2 tsp dried sage
3/4 cup rotini (not cooked)
2 cups fresh spinach, chopped
salt and pepper to taste
- In a large saucepan, saute onion and garlic in oil over medium heat until tender - about 5 minutes.
- Add stock, tomatoes, beans and sage. Simmer, covered, for 10 minutes.
- Add Rotini, simmer 10 minutes more. Add more stock if necessary.
- Add Spinach and simmer 5 more minutes.
